Self-Care Challenge (Day 137): Making Coconut-Banana Bowls

Coconut-Banana BreakfastComing up with breakfast ideas can be a challenge, especially when you’re used to repeating a handful of your tried and true favorites.

Sunday mornings are my “experiment” days, and I get to have a little fun in the kitchen by coming up with random breakfast menus using whatever I happen to have on hand.

This morning I made a warm, coconut-banana breakfast bowl that not only made the house smell yummy, but it tasted delicious too.

I was initially inspired by a recipe I ran across on Pinterest, and I’ve made it once before. This morning, I didn’t feel like chopping nuts so I skipped that ingredient.
