Self-Care Challenge (Day 168): Baking Spaghetti Squash

spaghetti squashSquash is such a fun vegetable. 

It comes in lots of colors, shapes and sizes, and it’s so bountiful in the summer months that finding creative ways to use it can be a challenge.

Spaghetti squash is one of my favorite varieties. It’s easy to prepare and it’s a great alternative to pasta–if you’re looking for an easy way to reduce calories, that is. (Pasta contains over 100 calories more than spaghetti squash per serving.) Plus, squash comes in its own serving dish so cleanup is pretty easy.

If you’re looking for a way to get your 5 to 9 servings of fruits and vegetables each day, squash is a great way to get there.
