Self-Care Challenge (Day 137): Making Coconut-Banana Bowls

On day 137 of my 366-day self-care challenge, I explored a new breakfast recipe.

Coming up with breakfast ideas can be challenging sometimes, especially when you’re used to repeating a handful of your tried and true favorites.

Sunday mornings are my “experiment” days, where I get to have a little fun in the kitchen by coming up with random breakfast menus using whatever I happen to have on hand.

This morning I made warm, coconut-banana breakfast bowls that not only made the house smell yummy, but tasted delicious too. I was initially inspired by a recipe I ran across on Pinterest, and I’ve made it once before. But this morning, I didn’t feel like chopping nuts so I skipped that ingredient. I’ve always said that (unless you’re baking something) recipes are just suggestions.
