Squash is such a fun vegetable. Weird, but fun.
It comes in a variety of colors, shapes and sizes, and it’s so bountiful in the summer months that finding creative ways to use it up can be a challenge.
Spaghetti squash is one of my favorite varieties, and including on my menu was my act of self-care for the day. It’s easy to prepare and it’s a nice alternative to pasta – if you’re looking for an easy way to reduce calories, that is. (Pasta contains over 100 calories more than spaghetti squash per serving.) Plus, squash comes in its own serving dish, which makes cleanup a cinch.
